My South Fry Bake

 Makes 8  bakes

 

2 cups flour

1 tsp baking powder

1/2 tsp salt

1.5 tblsp sugar

2 tblsp butter or marg

1.5 cup warm water

 

Mix everything together, keep some flour for dusting

Rest for 15 mins

Roll into balls

Rest for 20 mins

 

Fill frying pan with 1 inch of oil enough to cover bakes

Heat up oil then drop to low heat

Gently Flatten with fingertips then fry on one side until golden 

Then flip until done

Place vertical in paper bag to drain and not get soggy

My Pancakes

1 ½ cups all-purpose flour

3 ½ teaspoons baking powder

1 teaspoon salt

1 tablespoon white sugar

1 ¼ cups milk

1 egg

3 tablespoons butter, melted



Directions

Step 1

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.


Step 2

Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Cook on one side until you see bubbles (about 50 seconds) then flip for another 40 seconds

Too heavy, needs more water to thin it out. add bananas to break up the batter a bit.

Crunchy Oven Chips

Ingredients

  • 750g DesirĂ©e potato (about 3 medium large), peeled
  • groundnut oil, for drizzling
  • sea salt and freshly ground black pepper

Method

  • STEP 1

    Heat oven to its highest setting, ideally 250C/fan 230C/gas 9. Cut each potato into 1cm-wide slices, then into 1cm-thick sticks. Blanch in a large pan of boiling water for 3 mins, then drain well. Get as much water out of the potato as possible.

  • STEP 2

    Shake the potatoes out onto a roasting pan, drizzle with oil, ensuring each chip is evenly coated, then season well. Bake for about 15-20 mins to an hour, turning the potatoes at least twice, until golden brown and crisp.
