Air Fryer Fries

  • Leave skin on, scrub the outside clean
  • Cut potatoes into 1/4 inch fries
  • Soak and wash until water runs clear
  • Dry fries as much as possible
  • Drizzle with oil to coat
  • Add a pinch or two of salt per potato depending on size and taste
  • mix well with hands to coat all fries
  • Place enough into air fryer to coat the bottom in a single layer
  • Set to 400 for 12 mins
  • Put paper in a large bowl, empty cooked fries onto paper
  • While still hot, sprinkle salt, onion powder, garlic powder, paprika, black pepper, parsley to taste
  • Toss in bowl until evenly coated
  • Let cool, and they'll firm up a bit

  • Small Metal tin, bowl or plate to go into air fryer
  • Oil it
  • Lump of butter
  • Egg
  • Salt, pepper
  • 4 mins at 400
  • place on toast

Meat Sauce-No Tomato

  

Ingredients

  • 1 lb ground beef15% fat
  • 1 medium onion, Carrot, celery finely diced
  • 1 tsp salt
  • 1/2 tsp ground cumin
  • 1/4 tsp black pepper
  • 2 garlic clovesminced
  • 1/4 cup water
  • 1 tsp granulated sugar
  • 12 oz spaghettito serve
  • Sliced mushrooms

Instructions


    1. Heat Oil, Add chopped onion,carrot, celery, 1 tsp salt, 1/2 tsp ground cumin 1/4 tsp pepper and sautee until onions are soft.
  1. Place a pot or dutch oven over medium heat, add 1 lb ground beef and sautee, breaking it up with a spatula until no longer pink (5 minutes).
  2. Add mushrooms, garlic and sautee another 1-2 minutes until fragrant . Simmer until liquid is almost gone. Optional, fold in cream at the end
  3. Meanwhile, cook 12 oz of spaghetti in salted water to desired doneness according to package instructions then drain. Serve sauce with cooked pasta.

My Chicken Soup

 1 tablespoon avocado oil or olive oil

6 cloves of garlic, minced

1 yellow onion, diced

2 large carrots, thinly sliced

2 celery stalks, roughly chopped

1 tablespoon fresh grated ginger

1 tablespoon fresh grated turmeric (or 1 teaspoon ground turmeric)

6 cups low sodium chicken broth

1 pound boneless skinless chicken breast or thighs

1 teaspoon freshly chopped rosemary

1 teaspoon freshly chopped thyme, stems removed

½ teaspoon salt

Freshly ground black pepper

1 cup pearl or Israeli couscous

2/3 cup frozen peas (optional, but recommended)


Boil everyting 20-25 mins

Cheese Paste

 

  • 250g block of cheddar cheese, grated
  • 1/2 small onion
  • 1 pimento pepper or 1/4 red bell pepper
  • 1/4 medium carrot
  • 2 cloves garlic
  • 1 tablespoon mustard
  • 1 tablespoon green seasoning
  • 4-5 tablespoons mayonaise
  • 1 teaspoon brown sugar
Grate on fine side
Mix all together

Grilled Chicken

  • Use ziploc bag, pound chicken 1/2 in flat
  • 1.5 tsp Salt, 1/2 tsp Pepper, Garlic ( clove per piece) , Olive Oil (6 tblsp, enough to cover chicken)
  • Put all in bag, let marinate for 4 hrs
  • Heat pan, pan fry/grill on each side 3-mins, covered
  • After cooling, can freeze for storage

  •  3 tblsp
  • 1 cup water
  • 2 teaspoons powder milk
  • 2 teaspoons sugar
  • pinch of salt

Bok Choy

 

  • Mince garlic and ginger
  • Heat two tablespoons of oil in a wok or sauté pan
  • Add the minced garlic and ginger and stir for 30 seconds
  • Add the bok choy and use tongs to toss and stir-fry for 2 minutes
  • Pour two tablespoons of water (or broth) into the pan, cover with a lid and cook for 2 minutes more
  • Turn off the heat, sprinkle a little sea salt and black pepper, stir and serve!
  • Cook until bright green, do not cook for more than 2 mins

Cole Slaw

 Ingredients

  • 3 cups green cabbage finely shredded
  • 2 cups purple cabbage finely shredded
  • 1 cup carrot finely shredded

Dressing

  • ½ cup mayonnaise/dressing
  • 1 tablespoon white vinegar
  • ½ tablespoon cider vinegar
  • 2 teaspoons sugar
  • ½ teaspoon celery seeds
  • salt & pepper to taste

Oven Burgers

  • Frozen patty - season salt and pepper both sides
  • Place on top of thick Onion slice
  • 2 cloves garlic
  • Set oven to 375 
  • Bake for 25 mins
  • broil on max for 3 mins
OR

Broil on max first for 5 mins
Then bake at 375 for 15 mins

Tuna Salad

  • Tuna in water or oil
  • Onions, tomatoes, pimentoes, salt, pepper, 3tsp mayonnaise (to desired taste or consistency), lime, 
  • Optional - celery, pickles
  • Drain Tuna, add all ingredients, mix
  • can use cucumber instead of pickles or celery

my Sunny Side up eggs

  • Brown butter on low heat 
  • Crack egg directly into pan, do not touch
  • Add a pinch of salt, pepper
  • leave for 100 seconds
  • turn off fire
  • use silicone spatula to carefully get under yolk and move to plate without breaking

Oven Bacon

  • Set oven to 425
  • Open, thaw and dry bacon by wiping
  • line pan with foil
  • place each strip in contact with the foil
  • cook for 15 mins
  • flip
  • cook for 15 mins

Pan seared oven roasted pork loin

  • Dry pork loin thoroughly
  • Dry rub season garlic, pepper, salt, thyme, rosemary, onion powder
  • Put some oil in pan enough to cover base
  • Pan sear on both sides, 2min each
  • Place in oven at 375 for 20mins

Oven Baked Pork

 

  • Pork chops
  • Garlic
  • Ginger
  • Soy Sauce
  • Salt
  • Pepper 
  • Sesame Oil

  • Mince garlic and ginger
  • Cover pork well with garlic, teaspoon of soy sauce, teaspoon sesame oil, ginger, pinch of salt, pepper to taste
  • Dry skin with paper towel as much as possible
  • Oil pan
  • Place pork on pan in preheated oven 450
  • Cook for 45 mins
